TWINS AND TWINS AND TWINS

Imagine my surprise when I cracked an egg onto my bed of chopped leeks, fennel and onion, topped off with a juicy scallop to discover TWO yolks.

It happens but not very often.

When I cracked the second egg into the next ramekin and the same thing occurred, I started to chuckle. By the third I was laughing, the fourth was a definite guffaw and by the time Id cracked the sixth I was screaming to my husband to fetch my phone to photograph my starter offering.

He looked but did not see what the fuss was about until I told him to count the egg shells that I didnt get in the picture so youll have to take me on my scouts honour word.

I buy my eggs from the baker, three doors down from me and he gets his eggs heavens knows where but they are always extra large and really, really fresh.

For the recipe, add a drizzle of cream and bake in a bain marie until the whites are set.

A great hit at my dinner table as it was hard to credit 6 consecutive double yoked eggs ....

WEDDING ANNIVERSARY - NOT SO GOOD FOR THE HIPS

But absolutely delicious on the tongue ! We celebrated our wedding anniversary last Friday, and spent a wonderful weekend. My husband took me to dinner on Saturday to a fabulous restaurant.

This was just one of 3 desserts that arrived and the chef had personalized this for us, although my husband had not asked for anything special.

The restaurant had heard his pleas for an anniversary table and decided to make it special for us.

On Sunday he invited me for a tete a tete lunch at home, but when he allowed me to come downstairs I discovered close friends who had crept into the house to celebrate the moment with us.

As we battle cancer, making such special memories are so necessary and I just hope that we will make many, many more.

A WEDDING ANNIVERSARY - MINE

Its today ... the date CUP publishes its community news and Ive decided to share my joy as we celebrate our 12th Wedding Anniversary.

You know that old adage ... if at first you dont succeed ... well he is my try and try again and I have never been happier.

Thank the Lord I am thinner now than I was when I got married so I look a bit of a fright but what a gorgeous hat thing I wore.

As we fight cancer, things like anniversaries are so important as we are making as many wonderful memories as we can.

Well actually be celebrating on Satuday and Sunday but I think I have a lovely card for him somewhere. Have a lovely week.

SPRING IS ALREADY SPRINGING

I dont have grandchildren to brag about, and life in France is not all baguettes and snails, but we are having a gently winter.

Having said that I spent last weekend up a mountain in a snow storm, but came down to more clement weather.

With my husband in the hospital being chopped about in preparation for radiotherapy, I snapped this picture while out walking my dog.

It just seemed so beautiful in all its droopy simplicity and these little catkins filled my heart with hope that life goes on and renews itself and that we might beat cancer, or at least hold it off for a good long while.

Blessings to any of you out there in the same boat. And because us ladies/nurses/carers are just great I thought Id take a run at International Womens Day... ENJOY!

MY VALENTINE TREE

We have had the most fabulous christmas tree, that has refused to lose its needles or go droopy, threatening to drop all my precious glass balls onto the floor where they could so easily become glass confetti.

On the 31st January I finally decided that I could not longer sport red and green garlands and bling but was totally against throwing out the tree.

So I have transformed it, into a VALENTINE TREE. I have made my own love ornaments which are all available on cup, and with an evening of easy cutting, folding and glueing have transformed my tree, swopping the red and gold garlands for silver ones.

My husband loves it, and hopefully it will last until I redecorate the tree for easter? Lets upcycle !!!
